Gladys Rhubarb Pie Recipe

My mother’s rhubarb pie was one of my favorites. How I wish she could bake me another! Not sure if this was her own original recipe but, to me, it has always seemed so.

Mix together:
1 ¼ cup sugar
4 T flour
¼ t salt
3 eggs
½ t grated orange peel

Mix well with 3 ½ cup rhubarb, cut in ½ inch slices. 

Fill pie pan & make lattice crust.

Bake at 400 degrees 5 minutes.  Then reduce temperature to 350 and bake 40 minutes or until done.
