Gladys’ classic cobbler
My mother made the easiest and most delicious cobbler. You can use lots of different fruit–or combination of fruits–but I love this recipe made with blueberries. Hope you enjoy as much as I do!
Ingredients:
- 1 cup sifted flour
- 1/2 cup sugar
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup soft butter
Sift dry ingredients. Add milk and butter all at once. Beat smooth. Pour over fruit. Sprinkle 2 teaspoons sugar over batter. Bake 350° for 30 minutes.
Tip: I fill my baking pan with the amount of blueberries I think appropriate (as if baking a pie, etc.) Usually 3-4 cups. I toss with some sugar, too, but this is if you prefer a bit more sweetness.
